Maratelli rice is an Italian rice, unique, suitable for risottos, soups and rice cakes. From the long, round and pearly seed, Maratelli Rice is characterized by a large cooking seal combined with an excellent capacity to absorb flavors.It’s one of the oldest varieties of Italian rice. The variety has been discovered by Mario Maratelli in 1914. In 2013, Cacina Canta registered the seed in the Historic Rice Varieties Registry and they became one of the few seed curator according to the ministerial decree of April 2013. Since 1914, the Maratelli rice has become one of the most appreciated variety and it’s used today to prepare dishes from the Piedmont tradition, such as Paniscia and risotto.
