Riccioli are an italian durum wheat semolina pasta belonging to the “Desert Durum” family, a type used by the best Italian pasta manufacturers for the production of “al dente pasta”. With a shape similar to a striped shell, the curl is a modern reinterpretation of the traditional geometry of the Sardinian gnocchi. A simple format that goes well with a large variety of condiments.
